I'll start with the figs. On the way to letting the dogs out for the day I passed our fig tree full of ripe figs. Being a southern woman I am genetically unable to pass any ripe fruit or vegetable without feeling guilty. They must be pickled, frozen, canned or "jammed". I chose to jam.
Yesterday I spent hours breading, frying and freezing eggplant slices. They'll make yummy Eggplant Parmesan this winter.
Tuesday was a day for tomato canning and corn freezing. I have a humble respect for those women of the old days who had to put food up or starve. I do know that it is a privilege and a blessing to have such an abundance of food.
Preserving your on food in these times is more of a luxury than necessity.
My last two weeks have been a frenzy of canning, freezing, pickling and "jamming". Hmmmmm, I'll be glad when Pirate Football Season gets here...... I need a BREAK!!
